Butter Chicken (Murgh Makhani) — India’s Most Popular Dish

Butter Chicken is one of the most iconic Indian dishes worldwide, known for its rich, creamy tomato gravy and tender chicken pieces.


Ingredients for Butter Chicken

(Serves 4)

For the Chicken Marinade

  • 1 kg chicken (boneless or bone-in, cut into pieces)

  • ¾ cup yogurt

  • 1 tbsp ginger paste

  • 1 tbsp garlic paste

  • 1 tsp turmeric powder

  • 1 tsp red chili powder

  • 1 tsp garam masala

  • 1 tsp salt

For the Gravy

  • 3 tbsp ghee or butter

  • 2 medium onions, finely chopped

  • 3 medium tomatoes, pureed

  • 1 tbsp ginger-garlic paste

  • 1 tsp cumin powder

  • 1 tsp coriander powder

  • ½ tsp turmeric powder

  • ½ tsp red chili powder

  • ½ cup fresh cream

  • 1 tsp garam masala

  • Fresh coriander for garnish


How to Make Butter Chicken

1. Marinate the Chicken

  1. Mix yogurt, ginger, garlic, and spices.

  2. Coat the chicken pieces thoroughly.

  3. Refrigerate for 30 minutes to 1 hour.


2. Cook the Chicken

  1. Heat 2 tbsp ghee or oil in a pan.

  2. Sear the marinated chicken until golden brown.

  3. Remove and set aside.


3. Prepare the Gravy

  1. In the same pan, add remaining ghee/oil.

  2. Sauté onions until soft and golden.

  3. Add ginger-garlic paste and cook 1–2 minutes.

  4. Add tomato puree, cumin, coriander, turmeric, and chili powders.

  5. Simmer 10 minutes until thick and aromatic.


4. Combine Chicken and Gravy

  1. Add the cooked chicken to the gravy.

  2. Mix well and simmer 10–15 minutes for flavors to blend.

  3. Stir in fresh cream and garam masala.


5. Serve

Garnish with chopped coriander and serve with:

  • Naan or roti
